Custard Pudding

This is a very old recipe I inherited from my sister, only that I have altered to my own personal preference.  Rasanya memang ramai yang dah tau buat Custard Pudding Berkuah ni.  Masing masing ada cara dan citarasa yang tersendiri.  Beberapa hari sudah, aku ada terima lawatan dari some Government bodies, inciting the feeling of nervousness in my system.  Yerla, lawatan ad hoc, and I don’t know the apparent reason.  Since Raya, order berterusan sehinggalah sekarang and kat Mersing ni pulak, the ingredient stock is limited! All this while I’ve been hunting down my ingredients at Bakers Zone in JB and yes, the last time I was there was like two weeks ago!

Geledah punya geledak my provision rack and cupboard, I have Canned Fruit Cocktail, custard powder and evaporated milk, the rest is mostly cakes and kuih punya ingredients.  Since the visit is just 2 hours away, this is the only saviour I could think of.  Takkan nak beli kuih kat gerai? Padahal dah tiga empat keturunan aku bermastautin kat sini.  Hina sangat rasa diri yang comel ni sampai orang tak kenal.

Huk Alohhhh!!

This recipe yields 15 serving

For the  custard pudding:
I cup Custard Powder (Better to use Custard Bird’s Brand)
5 cup plain water
4 tablespoons condensed milk
2 tablespoons sugar (you can adjust to your liking – but not too sweet as the cocktails is also sweet)

How to:
1.Place Milk, Sugar and water in a pot/saucepan
2. Turn the gas cooker to a medium low heat, stir and slowly pour the custard powder and let it dissolves. (if you have a hand whisk, use it)
3.  Keep on stirring until it thickens and starts boiling, lets do this for a few minutes more until it becomes glossy.
4. Transfer to the mould and let it cool

For the cocktail:
1 can evaporated milk
1 can plain water (measure with the evaporated milk can)
1 can Mix Fruit Cocktail (avoid buying the tropical ones, though they contains more vitamins they tends to be very soggy)
Sugar to taste
1 tablespoon vanilla essence
1 egg yolk
1 tablespoon custard powder

How to:
1.Place milk, plain water, sugar, vanilla essence and the juice of mix fruit cocktails in a pot
2. Mix egg yolk with custard powder and some water then pour inside the mixture.
3. Turn the gas cooker to low heat and stir the mixture constantly till the steam come out from the mixture.  Don’t let it boil or the mixture will curdle. Add in the fruit cocktail mix and stir for a while
4. Pour on top of the pudding and place in refrigerator for a few hours because this one is heaven when serve cold.

** Happy Trying **
